3 VegoRecept: Grilled fruit salad with chilli & lime dressing

Grilled fruit salad, 2 portions

1.5 cups of dried chickpeas or 1 package cooked
1 bunch of optional lettuce
0.5 pineapple
0.5 mangoes
2 bananas

Place the chickpeas to soak overnight if you do not use ready-cooked peas. Rinse them and cook them then soft.

Peel the fruit and then cut the pineapple into slices and mango into large pieces. Add fruit pieces on the grill and grill for a few minutes until they are golden brown on both sides. Then, cut the bananas and mango into small pieces and divide the pineapple slices in half.

Chilli & lime dressing
1 lime
2 tablespoons olive oil
0.5 tsp chilli flakes
Salt

Squeeze the juice from the lime. Pour the juice into a bowl with olive oil and chilli flakes, and season with a little salt.

Cover a plate with lettuce leaves and then partition chickpeas, banana and mango pieces between the plates. Add the pineapple slices on top, and top with chili and lime dressing.
