Spicy thyme potatoes

Today I share with you a quick recipe for a side dish that easily complements a range of meals. It is a favourite in the family, and maybe in yours too. 

You will need:
- Potatoes (I use Maris Piper)
- Oil (whichever you prefer)
- Mustard seeds
- Thyme
- Whole cumin
- Salt
- Curry powder
- Non-stick Wok Pan

Method:
1. Cut your potatoes to bite-size pieces
2. Boil the potatoes until they’re moderately soft
3. Drain the boiled water 
4. Add some oil to the pan, and wait for it to get hot
5. Once hot, put in some mustard seeds
6. The mustard seeds will begin to pop, and this is when you add your potatoes
7. Add a pinch of salt, half a tea spoon of curry powder (you can add more or less, depending on how much spice you’d like) and a tea spoon of thyme
8. On full heat, toss the potatoes until they are properly coated
9. Once they a crispy, golden skin, you’re done

Serving suggestion:
Drizzle some gravy to enhance the flavours, or enjoy alone alongside your main dish. 

Please note that this recipe is for four medium to large potatoes. 
The more potatoes you add, the more spices you may add, which largely depends on your personal preference.
